This Is My Fresh Summery Reset Meal.

Juicy teriyaki chicken, grilled if you want, served over rice with a scoop of bright gingery peaches, and a rich sesame drench getting into every bite.
YES PLEASE I love this meal!
My family’s summer eating has two basic modes:
- Fresh mode: vibrant, summery produce! crispy, juicy, colorful.
- YOLO mode: chips (so many chips), ice cream cones, hot dogs, fried chicken sandwiches, and packaged snacks that hit just right at the pool, on a road trip, or at the State Fair.
I truly love both of these categories. But once every few weeks, I start to sense myself going a bit hard into YOLO mode – typically after a road trip or an extended amount of pool days, which is where we’re at here at the end of summer.
This teriyaki chicken with ginger peaches has been my go-to meal for when I’m ready to get back to something a bit fresher.

I’ve made it as a bigger meal for my extended family – nieces, nephews, sibs, parents – where my dad helped me grill the chicken, we sliced up “plain peaches” for the kids, and almost all of us went back for seconds.
And I’ve also made it for a meal just for our family, because 9 out of 10 nights, I am looking for a way to just eat peaches for dinner (or, dessert).
Hope you love it, too!

How To Make This Teriyaki Chicken (Video)
Teriyaki Chicken with Ginger Peaches and Sesame Drench
- Total Time: 2 hours 15 minutes
- Yield: 4 servings 1x
- Diet: Dairy-Free
Description
Juicy grilled teriyaki chicken, bright gingery peaches, and a rich sesame drench all over top! My go-to dinner when I want something fresh!
Ingredients
Teriyaki Chicken
- 1/2 cup teriyaki sauce (I use Soy Vay)
- 1 large clove garlic, grated (or 1/2 teaspoon garlic powder)
- 1 lb. chicken breasts
- 2 teaspoons avocado oil
Ginger Peaches
- 4 peaches or nectarines, diced
- 1/4 cup chopped scallions, or cilantro, or both
- 1 teaspoon freshly grated ginger
- 1–2 tablespoons fresh lime juice (from 1–2 limes)
- 1/2 teaspoon salt
- 1 tablespoon sugar
Sesame Drench
- 1 tablespoon reduced sodium soy sauce
- 1 tablespoon toasted sesame oil
- 1 1/2 tablespoons brown sugar
- 1 teaspoon chili crisp
- 1–2 tablespoons water (as needed, to thin it out)
Extras For Serving
- 1 cup of white rice
- Green beans (optional)
Instructions
- Prep Chicken: Slice the chicken breast into thinner pieces, or pound them out to be thinner.

- Marinate Chicken: Marinate the chicken in the sauce and garlic for 2-12 hours. (Optional – more time = better flavor, but it will work even with a shorter 15-30 minute marinate time!)

- Make Rice: Start cooking your rice according to package directions.
- Make Sauce: Whisk the sesame drench ingredients together and set aside.
- Make Gingery Peaches: When you’re close to being ready to eat, toss peaches, scallions, ginger, salt, and sugar together. Usually the peaches will release some juices and it will become slightly saucy, but you can add a bit of honey to help it along if it seems too dry.

- Cook Chicken: Heat the avocado oil in a large skillet over medium heat. Let any excess marinade drip off the chicken, then add to the pan and sauté for 3-4 minutes per side, until the chicken reaches an internal temperature of 165 degrees.

- Serve: Serve the chicken over rice, with a scoop of the peaches, and a drench of the sesame sauce! Add green beans if you’d like! So super fresh!

- Prep Time: 2 hours (if marinating)
- Cook Time: 15 minutes

This looks delicious! I’m vegetarian so I’m going to try it out with tempeh and let you know how it goes!
I’m vegan and trying out with tofu!
How was it with the tofu?
Yes, let us know how it turns out!
This was delicious. I’ve been trying to make and eat recipes as presented. Yummy!
So glad you enjoyed it!
Beautiful and delicious recipe! Served alongside red cabbage and went beautifully with the ginger peaches and sesame crunch!
Made this for dinner the same day I got the email newsletter highlighting it. THIS WAS AN ABSOLUTE BANGER!
Pinch of Yum recipes never let me down.
I subbed chicken thighs for breasts because that’s what we like, and we grilled them instead of pan sautéing. I also subbed miso sugar for regular sugar in the peaches and it added a nice umami sweetness.
We served with rice and cilantro lime corn on the cob.
Make this. You won’t regret it.
Sounds so good!
I love this recipe!
Absolutely delicious! I’m not normally a big fan of combining sweet/fruit flavors with savory, but I used a combo of nectarines and peaches with cilantro, and both my husband and I loved it. Easy and fun to make.
This was absolutely delicious!! I made it with nectarines bc that’s what I had – my husband said ‘Restaurant worthy dinner!!’ So good thanks for the recipe it’s a keeper!! 😊
Made this last night with jasmine rice and green beans as a side. It was delicious! All 3 of my kids liked it, my 7yo was meh towards the peach salsa, but oh well.
But. I hate *HATE* pan-frying large pieces of meat. Even when it’s butterflied. I don’t think cutting the chicken up would work, but for next time, what do you think of baking the marinaded chicken Bs?
You can do that if you’d like!
Absolutely delicious! Served with garlic sautéed green beans and jasmine rice. So fresh and a beautiful presentation.
Glad it was enjoyed!
So good! Amazing blend of flavors.
This was so delicious! We used fresh peaches from our local farmer’s market. We didn’t have any chili crisp so I used some sweet chili sauce instead and it worked nicely!
Yum!
This recipe was so tasty we will definitely be making it again. 🙂
This recipe turned out so beautifully! I made a few swaps, using sweet nectarines (I didn’t need the sugar they were that sweet!), pea pods for green beans, and chicken thighs for the chicken breast. Delicious! I will keep this in my repertoire!
Thanks for making the recipe!
wow! another winner! not sure how it would serve 4 but my husband and i enjoyed all chicken and rice and had leftover peach salad and sauce. used coconut aminos for teriyaki and soy sauce. Did not use any sugar in with the peaches and only about 1/2 T for the sauce. loved it all!! thanks for always bringing unique and delicious recipes!
This was such a delicious dinner. I marinated the chicken for a day and half and brought it with me camping. I premade the sesame drench and brought it with me. I made the salsa while the chicken was bbqing ..it was a huge hit. We will definitely make this again and again and again. Thank you Lindsay!!
Yay, so glad you enjoyed it!
Delicious!! Very easy to make and nicely balanced!
Fantastic recipe! I did grill the chicken because it is hot and I didn’t want to heat up the house, but otherwise I followed the recipe exactly. Personally I think I might skip the sesame sauce next time, only because I thought the peaches were so delicious and I wanted to keep that flavor central. I’m sad peach season is just about over because I’d like to eat this all the time!
This was great. I cheated a little and used a bottled Bulgogi sauce to marinate the chicken because I had it on hand. I made the peaches and the sesame drench (tripled!!) as specified. Served with brown basmati rice. I made this when my parents were visiting and it was a hit. First of the leftovers to get eaten at lunchtime too!
When I read this title it sounded strange yet I read the recipe and it intrigued me. I’m so glad I made it! Delicious. It really is like a love letter to summer.
